Chicken Stuffed Poblano Peppers

Last night for dinner we had my healthy version of a chicken enchilada.  This recipe has no tortilla, and I make homemade enchilada sauce to avoid the canned stuff.

This isn't actually my picture.  I forgot to snap one, but hey looked something like this.
For the chicken:
4-6 roasted poblano peppers- seeds and membrane removed
1 lb chicken breast
1 cup low sodium chicken broth
Taco seasoning
1/2 onion-diced
1 ear roasted corn-shaved from cob
monterrey jack cheese

*I roasted my corn and peppers on the grill the day before.  Right when I took the peppers off the grill I put them in a Ziploc bag to steam.  This makes the skin come off easier.

Season the chicken with the taco seasoning and put in a crock pot with the chicken broth on low for 8 hours.  After it is done, shred the chicken and add the onion and corn.  Stir to combine.  Make a slit down one side of each pepper and stuff with chicken mixture.  Place in a baking dish and cover with a little bit of cheese and the enchilada sauce.  Bake at 350 degrees for about 30 minutes.

For the enchilada sauce:

1 pint tomato sauce (I can my own, but you could use store bought)
3 cloves of minced garlic
2-3 Chipotle en Adobo peppers-chopped
1 tsp cumin
2 tsp chili powder
1 tsp onion powder
*depending on your tastes you can add more seasoning if you like

Combine all the ingredients in a sauce pan and bring to a boil.  Simmer for at least 10 minutes to let the flavors combine.  If you are using a store bought can of tomato sauce, add a cup of water as well.

For the 21 Day Fix this is equal to 2 green, 1 red, 1 blue, and 1/4 yellow (because of the corn).

Healthy Breakfast Bars

I always do my meal planning and shopping on Saturdays, and this Saturday I made ahead some healthy breakfast bars.  These are great for mornings when you don't have much time, or to keep around for a snack.


To make these bars you will need:

  • 2 cups of rolled oats
  • 1 cup almond milk
  • 1/2 cup all natural peanut butter
  • 4 scoops of chocolate protein powder (I used Shakeology)
  • 1/2 cup shredded coconut (optional)
  • 1/4 cup raisins (optional)
  • 1/4 cup chopped walnuts (optional)
Put all of the ingredients in a large bowl and mix thoroughly.  Don't be afraid to use your hands.  Transfer them to a square pan (I used 8x8), and put in the refrigerator to set up.  After they have spent some time in the fridge cut them into bars.  You should be able to get 12 bars out of this recipe.  They taste like a guilt free no-bake cookie :)  

For the 21 Day Fix, 1 bar will be equal to 1 yellow, 1/2 blue, and 1/2 red

Banana's Foster Shakeology

This morning for breakfast I had made one of my favorite Shakeology recipes.  



I love this recipe so much.  It feels like I'm cheating and drinking a milk shake for breakfast!  I added:
  • 1 scoop vanilla Shakeology (you can use your favorite vanilla protein powder)
  • 1/2 banana
  • 1/2 cup almond milk (I have also used coconut milk for this one)
  • 1/2 cup water
  • a few ice cubes
  • 1 tsp all natural rum extract 
I blend it all together in my Ninja, and bam!  Breakfast is served.  

For the 21 Day fix this recipe is equal to 1 red, 1/2 yellow, and 1 purple.

Healthy Huevos Rancheros

After Church Sunday Brunch

Every Sunday after church, we go to brunch with my sister.  The last couple of weeks I have been making it at home instead of going out, and I have found some great tasting, healthy, recipes.  Today we had a healthy version of huevos rancheros.  Click here to see the original recipe. I just made a few alterations to make it even healthier.


I substituted a taco seasoned ground turkey for the chorizo and topped it with our favorite homemade salsa.  I also used refried black beans instead of whole beans.  

For the 21 Day Fix this breakfast is equal to 1/2 yellow (corn tortilla), 1 1/2 red (ground turkey, refried black beans, 1 egg), 1 green (diced tomatoes, red onion, green onion, salsa) and 1 blue (queso fresco).

It was really yummy!

Salmon and Lentil Caprese Salad

I got the original recipe from lecremedelacrumb.com.  I have modified the amounts to fit into the 21 Day Fix for me and the hubs.  So, here's what you need:



Whatever your favorite leafy green is will work for this salad.  I happen to have a head of romaine from my most recent Bountiful Basket, and some spinach.  You will also need salmon (I am using a 1/3 lb piece for both of us), onion (I'm using red), fresh lemon juice, balsamic vinegar, and pepper (salt can be used too, but I choose not to).  I was hoping that I had more cherry tomatoes (also from my Bountiful Basket), but I only had 3 so I am using a beefsteak tomato to supplement.

The lentils will take about 20 minutes to cook, so start those first:  I added 1 yellow container of dry lentils to 3 containers of water to a saucepan.  Bring up to a boil and then cover and simmer for about 20 minutes.  Drain once they are tender.


The lentils more than double in size after cooking.
Preheat your oven to 400 degrees and spray a baking dish with a non-stick cooking spray.  Place the salmon, skin side down, in the baking dish and liberally cover with pepper.  I squeezed 1/2 of a fresh lemon on mine.  On the 21 Day Fix, lemon juice and pepper can be used as much as you want, so they are great to use to season with.  Bake the salmon for 10-15 (the piece I got ended up taking about 20) minutes or until salmon is flaky.



While the salmon is baking you can work on the balsamic reduction.  Vinegar is also an unlimited on the 21 Day Fix… WooHoo!  Put 1 cup of balsamic vinegar in a saucepan.  Bring it to a boil and then let it simmer for about 10 minutes to reduce and thicken.  Remove from heat and put into a different bowl.

Cut onions and tomatoes to whatever size you like.  The onions are only for me, the hubby does't like them.


Once everything is ready, assemble the salad.  I already have 1 green container of greens in my bowl and will add another green container of tomatoes and onions.  The rest of the salad is 1 yellow container of cooked lentils, 1 blue container of mozzarella cheese, and 1 red container of salmon. 



Finally, I drizzled on the balsamic reduction and added some black pepper.


The hubby had 2 green containers of lettuce, 2 red containers of salmon, 1 green container of tomatoes, 1 yellow container of lentils, and 1 blue container of cheese.
